Fruit Medley Cobbler

This recipe is great for a lovely summer day.

  • 1 bag (600 g) Snowcrest Fruit Medley
  • 1 cup (250 ml) flour
  • ¾ cup (175 ml) sugar 1 tbsp (15 ml) sugar
  • 2 tbsp (30 ml) flour 1 ½ tsp (6 ml) baking powder
  • ½ tsp (2 ml) cinnamon 3 tbsp (45 ml) butter or margarine
  • 1 tbsp (15 ml) butter or margarine ½ cup (125 ml) milk

Preheat oven to 400° F (200° C).
Pour 1 bag Snowcrest Fruit Medley into a square baking dish. Combine ¾ cup (175 ml) sugar, 2 tbsp (30 ml) flour, and cinnamon, pour over fruit medley and toss to coat the fruit.

Dot with 1 tbsp (30 ml) of butter or margarine. Bake in oven, on center rack for 20 minutes. Meanwhile, combine 1 cup (250 ml) flour, 1 tbsp (15 ml) sugar and baking powder in a bowl. Cut in 3 tbsp (45 ml) of butter or margarine.

Stir in milk and gather dough into a ball. Do not over mix. Drop spoonfuls of dough onto the fruit. Gently spread out the spoonfuls of dough (do not completely cover all the fruit).

Bake uncovered in 350° F (180° C) oven for 40 minutes until topping browned. Serve hot or cold, plain or with whip cream, ice cream or vanilla frozen yogurt.

Serves 6 to 8.
